I assume you're referring to the knocks that are part of the Golden Dawn's initiation ceremonies, as I don't recall any knocks in the Enochian material.

These knocks primarily relate to the Sephirah of their grade. For example:

Zelator - Malkuth - 10th Sephirah - !!!! !!! !!! (10 knocks)

The "Knock for Fire" that you mention is actually the knock for the Philosophus grade in the GD, which is attributed to Fire. It has less to do with the element itself and more to do with the collective energies of that grade (which include Fire, among other things).

The knock should really be:

!!! !!! !

Philosophus is attributed to Netzach on the Tree, the 7th Sephirah, thus resulting in 7 knocks.
